Process: Co-Ferment Washed
The Citrullus Nectar Co-fermented Washed process involves creating a mother culture with microorganisms from coffee cherries, then fermenting it with sugar, molasses, and fruit juices. After measuring sugar content, coffee cherries are pulped, mixed with the fermented culture, and fermented for 150 hours. The coffee is dried for 2-3 days in sunlight and 15-18 days under shade until it reaches 10-11% humidity.
