El Mirador is a 31-hectare coffee farm in El Portal, Huila, Colombia, owned by Elkin Guzmán. Elkin's family has over 70 years in coffee, with 12 years dedicated to researching post-harvest processing. Coffee cherries are fermented with a specially prepared mother culture for 190 hours to enhance fruit notes while preserving the coffee's base flavor. The mother culture, made with fruits, herbs, and brown sugar, is optimized in 4 days to promote rapid fermentation and is carefully monitored for pH to ensure ideal conditions for the cherries.
